Fossils tell us that olive trees have existed for as long as 35000 years. This legendary evergreen, silvery leaved tree has to grow for many years before bearing its first fruit and can live for up to 2000 years.

The fruit begins to ripen in December, turning violet and then black before being harvested.

The ripe olives are only harvested between December to March and are processed by the ’maîtres huiliers’ the same day.

The olives are ground to a paste before being placed in a centrifuge, where the simple force of gravity separates the heavier oil from the juice of the olives before it is passed through a paper filter and bottled.

Gourmet Tip

Olive oil fruity with its characteristic bite and a slight bitterness is an excellent match for hearty dishes.

Health Tip

Rich in mono-unsaturated fatty acids and polyphenols, olive oil is good for the cardio-vascular system and the control of cholesterol levels in the blood. Because of its ant-inflammatory and disinfecting qualities it can also be used for massaging.
